A Small Business Enterprise – Campus Dining, Inc. is a small business enterprise with a national client base. Our goal is to be the background music to your success. Campus Dining, Inc. began as a division of Corporate Dining, Inc. in 1992 and incorporated in 2003 in order to develop and expand the research activities of FoodMark® in college and university dining services throughout the United States.

We regularly work with self-operated and contracted dining operations in both public and private colleges and universities.

Our People

Todd Tekiele

Project Manager

Todd graduated from Michigan State University with a B.A. in Hospitality Business. He holds an M.A. in Management from Cornerstone University in Grand Rapids, MI and a Master Certificate in Project Management from Villanova University. He has held a variety of responsible positions in the dining services industry, including education, conference centers, recreation, restaurants, sales, and catering.

He is a CASP-designated professional Higher Education Auxiliary Services specialist with experience in Dining and Conference Services, ID/One Card programs, Financial Management and Analysis, Strategic Planning, hands-on Project Management for facility renovations, dining services Request for Proposals, Real Estate, and Property Management. Todd’s project work at Campus Dining, Inc. has included Case Western Reserve University, The College of William and Mary, Governors State University, Lamar University, Loyola Marymount University, Stetson University, Transylvania University, The University of Utah, Northern Arizona University and Wayne State University.

Prior to joining Campus Dining, Inc., Todd was the Director of Auxiliary Services at Albion College from 2006 to 2013. Preceding Albion College, he was the Director of Food & Nutrition for the Haslett (MI) Public Schools and Dining Services Manager at Michigan State University.

Since 2003, Todd has been active with the Michigan High School Athletic Association (MHSAA) as a basketball official.

Thomas D. Newcomb

President, Campus Dining, Inc.

Tom has spent his entire professional career in the hospitality industry. After graduating from Denison University, he joined the Stouffer’s Food Corporation and worked his way from an hourly employee to corporate regional management.

As the founder of Campus Dining, Inc. and Corporate Dining, Inc., Tom commits to projects where the team relationship will provide long-term strategic benefits for clients. Pioneering the confidential data sharing of campus and corporate dining services information through the proprietary, nationally recognized FoodMark® program, Tom has supported food service best practices in over 250 colleges and universities such as Boston College, University of New Hampshire, Clemson, Wayne State, Harvard University, UCONN, College of the Holy Cross, University of Alabama, Cornell, University of Central Florida, University of Rochester, University of Notre Dame, Franciscan University, University of North Carolina, University of Montana, University of Texas, Gettysburg, Providence College, and many more.

Tom is a member of NACUFS, NACAS, American Society for Quality Control (ASQC), and The Society for Hospitality and Foodservice Management (SHFM). He is a past member of the SHFM Board of Directors and past chair of its Benchmarking Committee. Tom is the recipient of the Society for Foodservice Management’s 2011 Richard Ysmael Distinguished Service Award and its 2008 Leadership Award.

As a thought leader in the on-site dining services industry, Tom has been interviewed and quoted in the Wall Street Journal and Food Management magazine. Tom speaks nationally on the Process of Benchmarking, Customer Satisfaction, Quality Assurance and Contract Management at events such as NACAS and NACUFS regional and national events, the SHFM Annual Conference, and Best Practice and FoodMark® Workshops.

Liz McMahon

Project Coordinator

Liz has been with Campus Dining, Inc. since 2007. Prior to that, she was a nonprofit executive for some of Cleveland’s leading arts and cultural organizations as well as program director for one of Ohio’s largest chambers of commerce.

Liz’s current role includes project coordination and client support, assistance in the development and process of dining services Request for Proposals, national studies, research and data gathering, workshop coordination, administration, and FoodMark® accounting.

A partial list of clients with whom Liz works includes Case Western Reserve University, The College of William and Mary, the PASSHE Universities, Stetson University, Wayne State University, Marietta College, New York University, Transylvania University, and the University of Southern Mississippi.

Lori Murphy

FoodMark Administrator

Lori has been with Campus Dining, Inc. since 2007 and is the Administrator of the FoodMark® program. She is responsible for all components of FoodMark® benchmarking, which include client reports, data handling, and Webex training events.

Campus Dining, Inc. is responsive to clients’ needs for 24-hour access to data, so Lori develops client dashboards to present their dining performance data online. Lori also coordinates FoodMark® original research on industry topics, such as the annual Dining Services Retail and Resident Pricing Study.

Prior to joining Campus Dining, Inc., Lori was the owner of Murphy Enterprises, a woman-owned business providing Maintenance, Repair, and Operating supplies to corporations and government entities in Northeast Ohio. For ten years prior to that, she was an independent contractor for Bowman Distribution, an MRO supplier, providing products such as fasteners, welding supplies, chemicals, and electrical supplies to the maintenance departments of corporations in the greater Cleveland area.

Clients with whom Lori works include Boston College, College of the Holy Cross, Lamar University, Northern Arizona University, University of Notre Dame, University of New Hampshire, The University of Utah, and the University of Southern Mississippi.

Jim Dabrowski

Project Manager

Jim is a graduate of the Culinary Institute of America and holds a B.A. in Business Management from Baldwin-Wallace College in Berea, Ohio. After several years as a Chef, he focused his career towards management, joining the Marriott Corporation in the Corporate Services division.

Jim worked in the Midwest as General Manager of Corporate Accounts, with clients including Ashland Oil, Inc. in Ashland KY, NCR Technical Training Center, Dayton, OH, and the Museum of Science and Industry in Chicago, IL. He also directed a self-operated food service program at Westfield Group in Westfield Center, OH.

Jim developed his interest in College and University Dining as General Manager of the Kent State University Stark Campus Conference Center. He currently serves as the Director of Event Services and Campus Dining at Lakeland Community College in Kirtland, OH. Jim is a FoodMark® Champion with Campus Dining, Inc., working with the PASSHE Universities.

Ron Papajcik

System Administrator

Ron is a graduate of Case Western Reserve University and the Weatherhead School of Management. After starting as a co-op student employee at a Cleveland manufacturing company, he then hired on and started their Information Systems Department. There, he managed their entire software, hardware and networking resources until recently.

Ron joined Corporate Dining, Inc. and Campus Dining, Inc. in 2013 as the AHF Benchmarking Express™ System Administrator. Ron is responsible for maintaining the benchmarking website, enrolling members, generating the monthly and quarterly reports and answering member questions regarding benchmarking how-to’s. His practical experience as a user group member, as a former President of an international software user group and as an Information Systems Manager, allows him to bring a range of perspectives to help AHF members benefit from their investment in benchmarking.

Liz Boone

Field Project Manager

The former executive Director of Nutrition Services at Aultman Hospital, an inner city acute care 804-bed hospital, Liz, a registered and licensed dietitian, joined our company as Project Manager in 2015. Liz was an Adjunct Professor at Aultman College of Nursing & Health Sciences and a participating member of the Academy of Nutrition & Dietetics and Ohio Board of Dietetics. She has a BS in Dietetics & Nutrition from Ohio University and MBA in Healthcare Administration from Regis University. Awards include the Presidential Special Service Award for Benchmarking from Association of Healthcare Foodservice, where she has been the Benchmarking Chair for 3+ years, and the Illuminating Excellence Award from Premier (GPO) for demonstrated excellence in the food service field.

Liz is responsible for the Association of Healthcare Foodservices (AHF), FoodMark® program and has performed work at Intuit, USAA and the PASSHE Universities.
