A Small Business Enterprise – Campus Dining, Inc. is a small business enterprise with a national client base. Our goal is to be the background music to your success. Campus Dining, Inc. began as a division of Corporate Dining, Inc. in 1992 and incorporated in 2003 in order to develop and expand the research activities of FoodMark® in college and university dining services throughout the United States.

We regularly work with self-operated and contracted dining operations in both public and private colleges and universities.

Our People

Thomas D. Newcomb

President, Campus Dining, Inc.

Tom has spent his entire professional career in the hospitality industry. After graduating from Denison University, he joined the Stouffer’s Food Corporation and worked his way from an hourly employee to corporate regional management.

As the founder of Campus Dining, Inc. and Corporate Dining, Inc., Tom commits to projects where the team relationship will provide long-term strategic benefits for clients. Pioneering the confidential data sharing of campus and corporate dining services information through the proprietary, nationally recognized FoodMark® program, Tom has supported food service best practices in over 250 colleges and universities such as Boston College, University of New Hampshire, Clemson, Wayne State, Harvard University, UCONN, College of the Holy Cross, University of Alabama, Cornell, University of Central Florida, University of Rochester, University of Notre Dame, Franciscan University, University of North Carolina, University of Montana, University of Texas, Gettysburg, Providence College, and many more.

Tom is a member of NACUFS, NACAS, American Society for Quality Control (ASQC), and The Society for Hospitality and Foodservice Management (SHFM). He is a past member of the SHFM Board of Directors and past chair of its Benchmarking Committee. Tom is the recipient of the Society for Foodservice Management’s 2011 Richard Ysmael Distinguished Service Award and its 2008 Leadership Award.

As a thought leader in the on-site dining services industry, Tom has been interviewed and quoted in the Wall Street Journal and Food Management magazine. Tom speaks nationally on the Process of Benchmarking, Customer Satisfaction, Quality Assurance and Contract Management at events such as NACAS and NACUFS regional and national events, the SHFM Annual Conference, and Best Practice and FoodMark® Workshops.

Virginia Dunleavy

Field Associate

Virginia “Ginnie” Dunleavy started her hospitality career with Hyatt Hotels. She has now been engaged in the college and university onsite hospitality business for over twenty years. She is currently the Executive Director of Auxiliary Services at the Rhode Island School of Design (RISD). She is the former Director of Dining and Retail Services at RISD and the Associated Director of Dining at Brown University.

In 2019 she joined the Campus Dining, Inc. team as a with special expertise in master planning, maximizing service offerings, revenue, innovation, leadership development, and efficiency in dining. Ginnie is a long-term member of NACUFS and NACAS. She participates with the Rhode Island Women in Higher Education, the RISD Student Mentor Program and Women Ending Hunger.

Darin Schluep

Field Associate

Darin started his hospitality career after graduating from the University of California – Davis in 2006. He is currently the Director of Associated Students Dining Services at the University of California Davis COHO. He oversees the unique student-driven $7MM service portfolio comprised of large volume multi-platform retail operations.

As a long-term member of NACUFS he was the Regional Director of the Pacific Region. He received President’s Award, NACUFS Pacific Region, 2011 awarded in recognition of outstanding contributions and a high degree of professionalism in the college and university food service community.

Darin brings a special skill in onsite dining operations and student led dining programs. For Campus Dining, Inc. he is developing and will facilitate the FoodMark program in the Western Region of the United States. His project work includes the University of Utah, Gonzaga University, and the University of Arizona.

Barbara Clemens

Project Manager, Business Intelligence

Barbara has been with the company since 1998. With a strong IT, legal and now dining background, she has both expertise and national recognition in developing benchmarking data exchanges for corporate and campus dining markets. As a Business Intelligence Project Manager, Barbara develops new technology tools to transform raw data into useful and meaningful information. She is developing interactive dashboards to provide clients with an organized and quick way to view their data.

Barbara has directed annual trade association benchmarking, data gathering & analysis for RFPs, and has worked on customer satisfaction, leadership, and benchmarking surveys for companies such as Google, Microsoft, Morgan Stanley, Assoc. of Health Care Foodservices, Protective Life, Blue Cross Blue Shield Florida and North Carolina, and Sprint.

Chuck Faulkinberry

CASP, IBQMI, Financial Analyst

Chuck has worked with Corporate Dining, Inc., and Campus Dining, Inc., as operator, client and now adjunct staff member since 2016.  His expertise is as a Financial Analyst and building financial business models for on-site dining service operations. As a graduate of Florida State University’s College of Business, Hospitality Administration he grew through the Marriott and Sodexo organizations to a leadership position as a District Manager and Regional Director of Operations. He successfully managed large, complex multi-college and university operations. He expanded his facilities and Dining Service knowledge as the Director of Auxiliary Services at Gonzaga University for five years.

Ron Papajcik

System Administrator

Ron is a graduate of Case Western Reserve University and the Weatherhead School of Management. After starting as a co-op student employee at a Cleveland manufacturing company, he then hired on and started their Information Systems Department. There, he managed their entire software, hardware and networking resources until recently.

Ron joined Corporate Dining, Inc. and Campus Dining, Inc. in 2013 as the AHF Benchmarking Express™ System Administrator. Ron is responsible for maintaining the benchmarking website, enrolling members, generating the monthly and quarterly reports and answering member questions regarding benchmarking how-to’s. His practical experience as a user group member, as a former President of an international software user group and as an Information Systems Manager, allows him to bring a range of perspectives to help AHF members benefit from their investment in benchmarking.

Sara Hufnagle

Project Associate

Sara joined the Campus Dining, Inc. team in 2017, after 13 years in the hospitality industry with Walt Disney World. She was engaged in the resorts, theme parks, and day to day customer services. Sara’s role as an Associate is project support and coordinating workshops for Campus Dining, Inc.

She has worked with FoodMark® Benchmarking, University of Utah, Franklin College, Lamar University, Howard University, PASSHE Universities, College of the Siskiyous, and the University of Idaho.

Jim Dabrowski

Project Manager

Jim is a graduate of the Culinary Institute of America and holds a B.A. in Business Management from Baldwin-Wallace College in Berea, Ohio. After several years as a Chef, he focused his career towards management, joining the Marriott Corporation in the Corporate Services division.

Jim worked in the Midwest as General Manager of Corporate Accounts, with clients including Ashland Oil, Inc. in Ashland KY, NCR Technical Training Center, Dayton, OH, and the Museum of Science and Industry in Chicago, IL. He also directed a self-operated food service program at Westfield Group in Westfield Center, OH.

Jim developed his interest in College and University Dining as General Manager of the Kent State University Stark Campus Conference Center. He currently serves as the Director of Event Services and Campus Dining at Lakeland Community College in Kirtland, OH. Jim is a FoodMark® Champion with Campus Dining, Inc., working with the PASSHE Universities.


Hannah Montes

Project Associate

Hannah Montes received her undergraduate degree at Otterbein University with a B.S. in Psychology and Latin American Studies. As well as Received her Master’s Degree in Clinical Psychology from Azusa Pacific University. Hannah is fluent in conversational Spanish and has taught statistics & psychology courses as a College professor.

As a member of our Client Support Services and Business Intelligence team, Hannah helps manage and run our FoodMark®, FoodExcel, FoodWrite, and FoodSkills Programs to help our clients not only understand their data but help tell the story and implement changes for continuous improvement.
